We enjoyed this rich, flavourful treat at the Marriott, Jaipur, many moons ago. Specifically in 2012, when the hotel had just about opened its doors. An affable Chef Raheel Ahmad was in charge of the kitchen, and told us that this and Laal Maans were among his hottest selling dishes. We suspect that hasn’t changed even now.
For those of you who don’t know, gatta curry is composed of gram flour (besan), yogurt and a blend of spices. The besan is kneaded with spices and rolled into dumplings, which are then boiled and floated into the divine curry starring yogurt.
When Covid-19 is a thing of the past, and a bountiful monsoon is knocking at our doors, we want to sit in a beautiful kitchen and tuck into delicious gatta curry with hot tandoori roti once again…
